however, the world as a whole produces sufficient food.<\/span><\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Food Security<\/h2>\n\n\n\n<p><span data-preserver-spaces=\"true\">According to the<strong> Food Security Program<\/strong>, there are&nbsp;<\/span><a class=\"_e75a791d-denali-editor-page-rtfLink\" href=\"http:\/\/www.fao.org\/3\/al936e\/al936e00.pdf\" target=\"_blank\" rel=\"noopener noreferrer\"><span data-preserver-spaces=\"true\">four dimensions of food security<\/span><\/a><span data-preserver-spaces=\"true\">.&nbsp;<\/span><\/p>\n\n\n\n<ol class=\"wp-block-list\"><li><span data-preserver-spaces=\"true\">Physical <strong>availability<\/strong> of food &#8211; supply<\/span><\/li><li><span data-preserver-spaces=\"true\">Economic and physical <strong>access<\/strong> to food &#8211;&nbsp;<\/span><\/li><li><span data-preserver-spaces=\"true\">Food <strong>utilization<\/strong> &#8211; how the body uses food<\/span><\/li><li><span data-preserver-spaces=\"true\"><strong>Stability<\/strong> &#8211; the three previous factors happening consistently<\/span><\/li><\/ol>\n\n\n\n<p><span data-preserver-spaces=\"true\">In this episode, I tell Manuel a story about a <strong>conversation I had with my son<\/strong>, which you may have had with your children.<\/span><\/p>\n\n\n\n<p><span data-preserver-spaces=\"true\">We are finishing up dinner, and the <em>conversation<\/em> goes like this:<\/span><\/p>\n\n\n\n<p><span data-preserver-spaces=\"true\">Mom: &#8220;P<em>lease eat all of your food; If our fridge has empty space, just like a plate, we feel like we need to fill it up.<\/span><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><span data-preserver-spaces=\"true\">Waste on the farm.<\/span><\/h3>\n\n\n\n<p><span data-preserver-spaces=\"true\">United Nations Food and Agriculture Organization&nbsp;<\/span><a class=\"_e75a791d-denali-editor-page-rtfLink\" href=\"http:\/\/www.producer.com\/2016\/07\/reducing-global-food-waste-can-enhance-farmer-profits\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span data-preserver-spaces=\"true\">estimates that one-third of all food grown<\/span><\/a><span data-preserver-spaces=\"true\">&nbsp;is lost or wasted, an amount valued at nearly $3 trillion. Almost half the food produced in the US is wasted on the farm.&nbsp;<\/span><\/p>\n\n\n\n<p><span data-preserver-spaces=\"true\">Prices change, and it is no longer profitable to send that food to the market.<\/span><\/p>\n\n\n\n<p><span data-preserver-spaces=\"true\">Loads of lettuce, kale, broccoli, spinach, and other greens are dumped in the landfill because they&nbsp;<\/span><a class=\"_e75a791d-denali-editor-page-rtfLink\" href=\"https:\/\/www.producer.com\/2016\/07\/reducing-global-food-waste-can-enhance-farmer-profits\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span data-preserver-spaces=\"true\">can't sell it to the best buyer<\/span><\/a><span data-preserver-spaces=\"true\">. Ton trucks full of perfectly good food, being dumped at the landfill.<\/span><\/p>\n\n\n\n<p><span data-preserver-spaces=\"true\">Wasted food is the&nbsp;<\/span><a class=\"_e75a791d-denali-editor-page-rtfLink\" href=\"https:\/\/www.theatlantic.com\/business\/archive\/2016\/07\/american-food-waste\/491513\/\" target=\"_blank\" rel=\"noopener noreferrer\"><span data-preserver-spaces=\"true\">single most prominent occupant in American landfills<\/span><\/a><span data-preserver-spaces=\"true\">, according to the Environmental Protection Agency. This food in the landfill emits methane 30-100x more potent than carbon dioxide.<\/span><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><span data-preserver-spaces=\"true\">How does perfect produce not make it to the market?<\/span><\/h4>\n\n\n\n<p><span data-preserver-spaces=\"true\">For example, imperfect peppers or tomatoes are left on the ground, plowed under in the field. An imperfect cauliflower, perhaps the color is yellow or slightly purple instead of white. This &#8220;off-color&#8221; cauliflower is tossed because it doesn't meet a beauty standard.<\/span><\/p>\n\n\n\n<p><span data-preserver-spaces=\"true\">Even produce that is &#8220;too big&#8221; can be discarded. A banana that has too much curve, or one that is too straight, may not make it to market. As consumers, we expect our fruits and vegetables to be &#8220;photoshoot ready.&#8221; It's the equivalent of expecting all people to look like airbrushed models.&nbsp;<\/span><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><span data-preserver-spaces=\"true\">This perfection is not realistic!&nbsp;<\/span><\/h4>\n\n\n\n<p><span data-preserver-spaces=\"true\">We can't blame it all on farmers. Produce is &#8220;graded,&#8221; and farmers know that to bring inconsistent shapes and sizes is a risk to their livelihood.<\/span><\/p>\n\n\n\n<h4 class=\"wp-block-heading\"><span data-preserver-spaces=\"true\">Other places perfectly edible food gets wasted include:<\/span><\/h4>\n\n\n\n<ul class=\"wp-block-list\"><li><span data-preserver-spaces=\"true\">in transit<\/span><\/li><li><span data-preserver-spaces=\"true\">in the supermarket<\/span><\/li><li><span data-preserver-spaces=\"true\">at home<\/span><\/li><li><span data-preserver-spaces=\"true\">in the restaurant<\/span><\/li><\/ul>\n\n\n\n<p><span data-preserver-spaces=\"true\">Some of what farmers grow ends up going to feed livestock. But people are hungry, and we begin to wonder why is all this food being thrown away? Why isn't it being donated?<\/span><\/p>\n\n\n\n<p><span data-preserver-spaces=\"true\"><strong>There is no law preventing grocery stores from donating food to food banks<\/strong>; the law encourages donation. The <a href=\"https:\/\/en.wikipedia.org\/wiki\/Bill_Emerson_Good_Samaritan_Act_of_1996\" target=\"_blank\" rel=\"false noopener noreferrer\">Bill Emerson Good Samaritan Food Donation Act<\/a>, signed in 1996, protects stores from liability if someone gets sick.<\/span><\/p>\n\n\n\n<h3 class=\"wp-block-heading\"><span data-preserver-spaces=\"true\">What can we do to prevent food waste?<\/span><\/h3>\n\n\n\n<ul class=\"wp-block-list\"><li><span data-preserver-spaces=\"true\"><strong>Grow<\/strong> your produce if possible<\/span><\/li><li><span data-preserver-spaces=\"true\"><strong>Compost<\/strong> to keep out of the landfill<\/span><\/li><li><span data-preserver-spaces=\"true\"><strong>Ask<\/strong> at the supermarket, do you <strong>donate<\/strong> excess food to non-profits so we can feed people in need?<\/span><\/li><li><span data-preserver-spaces=\"true\"><strong>Plan<\/strong> a menu, make a list, stick to the list<\/span><\/li><li><span data-preserver-spaces=\"true\">Use a Food Cycler to <strong>prevent food from ending up in kitchen trash<\/strong>. (be watching for a podcast episode and video on this strategy coming this Thursday!)<\/span><\/li><\/ul>\n\n\n\n<p><span data-preserver-spaces=\"true\">What can supermarkets do?<\/span><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><span data-preserver-spaces=\"true\">Have an <strong>ugly produce bin<\/strong> for people who are willing to buy marked down produce when it is ugly.<\/span><\/li><li><span data-preserver-spaces=\"true\">Stores can <strong>markdown produce<\/strong>&nbsp;<\/span><\/li><li><span data-preserver-spaces=\"true\"><strong>Reuse<\/strong> this produce in the store &#8211; create a ready to eat food and sell it&nbsp;<\/span><\/li><li><strong>Donate&nbsp;<\/strong>to food banks<\/li><li><span data-preserver-spaces=\"true\">Feed animals locally<\/span><\/li><li><span data-preserver-spaces=\"true\">Compost &#8211; cities can set up composting facilities<\/span><\/li><\/ul>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\"><p><span data-preserver-spaces=\"true\">The <a href=\"https:\/\/www.epa.gov\/sustainable-management-food\/united-states-food-loss-and-waste-2030-champions\" target=\"_blank\" rel=\"false noopener noreferrer\">staggering amount of wasted food in the United States<\/a> has far-reaching impacts on resource conservation and food security while costing businesses and consumers money. To help galvanize national efforts to reduce food loss and waste, <\/span><a class=\"_e75a791d-denali-editor-page-rtfLink\" href=\"https:\/\/www.epa.gov\/sustainable-management-food\/united-states-2030-food-loss-and-waste-reduction-goal\" target=\"_blank\" rel=\"noopener noreferrer\"><span data-preserver-spaces=\"true\">USDA and EPA announced the United States' first-ever food loss and waste reduction goal<\/span><\/a><span data-preserver-spaces=\"true\">&nbsp;in September 2015, calling for a 50-percent reduction by 2030. The government alone cannot reach this goal. It will require effort and action from the entire food system.
