The loaded sweet potatoes recipe came about one weekend when we were having a game night with friends.<\/p>\n<h3>Healthy, Delicious, and Easy!<\/h3>\n<p>My goal was to serve a meal that is highly nutritious, low in sugar, and easy to make and serve. In addition, I wanted the toppings to be optional so that different food intolerances could be accommodated. <a href=\"http:\/\/www.whfoods.com\/genpage.php?tname=foodspice&dbid=64\" target=\"_blank\" rel=\"false noopener noreferrer\">Sweet potatoes<\/a> have an excellent nutrient profile, therefore I highly recommend keeping them in your diet.<\/p>\n<a href=\"#wprm-recipe-container-17206\" data-recipe=\"17206\" style=\"color: #333333;\" class=\"wprm-recipe-jump wprm-recipe-link wprm-jump-to-recipe-shortcode wprm-block-text-normal\">Jump to Recipe<\/a>\n<p>That night the meal was overshadowed only by the fun fellowship and friendly competition as we enjoyed our game night.<\/p>\n<p>At my friends' recommendation, I am sharing the recipe with you. The meat mixture has beans, so if I were going to make this vegan, I would add rice to the beans. There are plenty of cheese substitutes on the market. In this way, you could also use this meal for #meatlessMonday.<\/p>\n<h4>Rainbow loaded sweet potatoes are really like eating the rainbow!<\/h4>\n<p>If you can find a variety of different sweet colored potatoes, your meal presentation will be even more vibrant. I have enjoyed using purple sweet potatoes as well as the traditional orange. It's effortless yet elegant, and they keep well in the fridge. Green onions also work for this dish.<\/p>\n<h4>Put your instant pot to work for you<\/h4>\n<p>I like to prepare the meat and beans in <a href=\"https:\/\/amzn.to\/36kCYdG\" target=\"_blank\" rel=\"nofollow noopener noreferrer\">the instant pot<\/a>, then turn on the keep warm setting. This is a stand-alone meal that needs no additions, however, if you wanted to, you could serve a simple <a href=\"https:\/\/www.thatorganicmom.com\/favorite-soups\/\">soup<\/a> and <a href=\"https:\/\/www.thatorganicmom.com\/rx-salad-in-a-jar\/\">salad<\/a> alongside the potato bar. Your friends will be thrilled and appreciate you looking out for their health.<\/p>\n<p>Use any salsa you like; my favorite for this dish is <strong>Trader Joe's Island Salsa<\/strong> with mango, pineapple, and red jalapeno peppers.<\/p>\n<p>A <strong>variety of hot sauces<\/strong> are always appreciated, so gather your favorites.
