It\u2019s such a fun and exciting accomplishment.<\/p>\n\n\n\n<p>Perhaps you\u2019ve tried my <a href=\"https:\/\/www.thatorganicmom.com\/everything-bagel-recipe\/\">Everything Bagel Recipe<\/a> and discovered the joy of freshly baked bagels. If so, you know how much better homemade can be. With such a fresh and delicious bagel, you\u2019ll want the best-tasting spread. That\u2019s precisely why I taught myself to make homemade cream cheese.<\/p>\n\n\n\n<p>Trust me, you can make homemade cream cheese to go with your favorite bagels even if you\u2019ve never made cheese before. In my youtube video, you\u2019ll notice I\u2019m using a gallon jug of whole milk and it looks very yellow because of the heavy cream that has risen to the top of the jug.<\/p>\n\n\n\n<p>The milk comes from Cruze Dairy Farms in Knoxville, but you can use whatever you can find near you. Although, I encourage you to look for a local dairy to obtain super fresh, high-fat milk for making homemade cream cheese.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">What You\u2019ll Need:<\/h3>\n\n\n\n<ul class=\"wp-block-list\">\n<li>pot big enough for up to a gallon of liquid<\/li>\n\n\n\n<li>organic cheesecloth for straining the curds (I recently found <a href=\"https:\/\/amzn.to\/3S2qtfr\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">this GOTS-certified organic cotton reusable cheesecloth<\/a> so I am not throwing anything away!)<\/li>\n\n\n\n<li>bowl to catch the whey<\/li>\n\n\n\n<li>colander or strainer to hold the curds in cheesecloth<\/li>\n\n\n\n<li><a href=\"https:\/\/amzn.to\/3bdFTwO\" target=\"_blank\" rel=\"noreferrer noopener sponsored nofollow\">thermometer<\/a> to get the milk to the right temperature<\/li>\n\n\n\n<li>an airtight container to store the cream cheese in<\/li>\n\n\n\n<li>1-4 quarts of whole milk, heavy cream, or a combination (not ultra-pasteurized) and also with a high-fat content &#8211; When choosing your dairy products, try to use fresh cream if possible; the fresher, the better.<\/li>\n\n\n\n<li>cream cheese starter culture powder (coagulant or mesophilic aromatic culture with rennet)<\/li>\n\n\n\n<li>Cheese salt or kosher salt &#8211; Non-iodized salt (I used Redmond\u2019s Real Salt, which is not iodized but does contain a small amount of naturally occurring iodine.)<\/li>\n<\/ul>\n\n\n\n<p>The cream cheese recipe and starter culture that I use is from Cultures for Health. You\u2019ll receive step-by-step instructions for making delicious cream cheese at home with simple ingredients when you order the culture packets.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Basic Homemade Cream Cheese Instructions:<\/h3>\n\n\n\n<ol class=\"wp-block-list\">\n<li><strong>Heat<\/strong>\u00a0the milk slowly, to\u00a086\u00b0F on the lowest possible setting.<\/li>\n\n\n\n<li>Remove\u00a0the milk from the heat and stir\u00a0in the cream cheese culture mixture packet with an up and down motion, not round and round.\u00a0[Do not stir longer than 15 seconds.]<\/li>\n\n\n\n<li>Cover the pot\u00a0and\u00a0leave\u00a0the mixture to culture at room temperature for\u00a012 hours\u00a0(about\u00a072\u00b0 &#8211; 77\u00b0F.)<\/li>\n\n\n\n<li>After 12 hours,\u00a0your milk will curdle. Remove the lid; the cheese is fairly solid but still relatively soft and resembles yogurt. This is normal and is what makes milk become cream cheese. The whey (clear or cloudy liquid) is separating from the cheese. (Save the whey for other uses if you like. *see below)<\/li>\n\n\n\n<li>Next, drape a piece of doubled muslin in the colander set over a bowl. (I clip the edges of muslin to the bowl to hold it in place.)\u00a0Carefully pour or spoon the cultured milk into the prepared container.\u00a0<\/li>\n\n\n\n<li>Gather up the corners\u00a0of the muslin, use cotton string to tie these together, then hang from a hook or knob, allowing the whey to drip into a clean large bowl (you can use the leftover whey, too!)<\/li>\n\n\n\n<li>After 6-12 hours, the cream cheese will reach a thicker consistency. (The longer you allow it to drain, the more it will thicken.)<\/li>\n\n\n\n<li>Salt the cream cheese and store it in an airtight container.<\/li>\n<\/ol>\n\n\n\n<p>While the total time for making homemade cream cheese is about 24 hours, the prep time is minimal. The cook time is only the amount of time it takes to heat the milk to 86 degrees Fahrenheit.<\/p>\n\n\n\n<p>The result is a deliciously tangy spreadable cheese that beats any store-bought out there.<\/p>\n\n\n\n<figure class=\"wp-block-embed is-type-video is-provider-youtube wp-block-embed-youtube wp-embed-aspect-16-9 wp-has-aspect-ratio\"><div class=\"wp-block-embed__wrapper\">\n<iframe loading=\"lazy\" title=\"Have you ever tried homemade cream cheese? I couldn\u2019t believe how easy it was. The resulting product doesn\u2019t resemble the waxy Philadelphia cream cheese you find in the supermarket but a fresher and slightly fluffier version.<\/p>\n\n\n\n<p>You can watch me make my first batch of cream cheese on this Instagram Reel and my second batch on my YouTube video here. The third time I made this using heavy whipping cream from a different dairy farm, it was just as good.<\/p>\n\n\n\n<blockquote class=\"wp-block-quote is-layout-flow wp-block-quote-is-layout-flow\">\n<p>Traditional cream cheese is made from 50% cream and 50% whole milk. Use\u00a0<strong>all heavy cream<\/strong>\u00a0for the\u00a0<strong>richest tasting cream cheese<\/strong>.\u00a0For a\u00a0<strong>lower fat cream cheese<\/strong>, use\u00a0<strong>whole milk<\/strong>.<\/p>\n<\/blockquote>\n\n\n\n<p>Remember to heat the milk slowly; heating it too fast will cause the milk not to set and you won\u2019t get a good curdle, which means runny cream cheese at best. Take your time, and you\u2019ll get great results.<\/p>\n\n\n\n<h4 class=\"wp-block-heading\">Uses for Whey<\/h4>\n\n\n\n<p>The first couple of times I made homemade cream cheese, I poured the whey into my worm bin. It worked out just fine. However, I wanted to use it, so I decided to pour it into a minestrone pot the next time, giving it such a good flavor.<\/p>\n\n\n\n<p>Here are a few more ideas for what to do with leftover whey:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li>feed some of it to farm animals or pets<\/li>\n\n\n\n<li>use it in the place of broth<\/li>\n\n\n\n<li>add it to mashed potatoes (or cauliflower)<\/li>\n\n\n\n<li>use it instead of water when baking bread<\/li>\n\n\n\n<li>dilute it and use it to water plants<\/li>\n<\/ul>\n\n\n<div id=\"recipe\"><\/div><div
